Jun. 1st, 2008 02:56 pmChili! I love it. I could eat cans of the stuff if one serving wasn't like 300 calories. Heck I could eat can of the stuff despite one can being half my daily calorie intake on a low calorie day.
By itself, in a bread bowl, on a hamburger, fries, hotdog, even in an omlette (yes an omlette); it's an all purpose topper. Spicy, with cheese, with chicken, vegetarian.. just as long as it has beans. And no onions, I sort of hate onions.
Chili is never going to be particularly low calorie, by dint of what it is, but it can be much much lower in fat and sodium than your average canned chili. How much lower? I don't have a clue really... but since I added no fat to my recipe it's pretty much whatever is naturally in the ingredients:
1.5 cups canned black beans rinsed and drained (210 calories)
8 oz can low sodium tomato sauce (70 calories)
5 oz can 98% fat free chunk chicken in water (125 calories)
0.5 tsp chalula hot sauce (5 calories)
1 tsp minced garlic (5 calories)
2 tsp low sodium chicken bullion (10 calories)
2 cups water
1 packet chili seasoning mix (120 calories)
In a sauce pan add the water 1/4th of the chili seasoning, the bullion and the black beans. Simmer for 5-10 minutes until the beans become tender and start to split, this helps get rid of the canned flavor of the beans as well as softening them and opening then for the seasoning. Drain them of all but about a tablespoon of the broth, these calories will not be counted (minus 40 from the total).
Set the beans aside, put the tablespoon of liquid in a saute pan with the garlic, chicken (drained and with the chunks broken) and another 1/4th of the chili seasoning. Saute until chicken is coated. Add to the beans in the sauce pan add tomato sauce, chalua (if you want the kick) and the rest of the chili seasoning. Mix and bring to a low simmer.
The calorie total (minus the broth only used minimally) is 505 calories for the entire pot which yields about 3 cups of chili. This is either one really big bowl or two decent sized servings that can be served with bread (a decent sized slice of sourdough- 60g or corn bread- 50g is about 175 calories) and with 2% reduced fat cheese (1/4 cup shredded is about 80 calories).
Next I work on a lower calorie version of corn bread.
